Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups panko breadcrumbs
  • 1 cup grated parmesan cheese
  • 2 cups marinara sauce
  • 8 oz. fresh mozzarella cheese, sliced
  • Fresh basil, chopped (optional)
  • Olive oil, for frying

 Instructions

  1. Preheat the oven to 375°F.
  2. Season the chicken breasts with salt and pepper.
  3. Place the flour in a shallow dish.
  4. In another shallow dish, beat the eggs.
  5. In a third shallow dish, mix together the panko breadcrumbs and grated parmesan cheese.
  6. Dredge each chicken breast in the flour, shaking off any excess.
  7. Dip the chicken in the beaten eggs, then coat in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere.
  8. Heat the olive oil in a large skillet over medium-high heat.
  9. Add the chicken breasts to the skillet and cook until golden brown, about 3-4 minutes per side.
  10. Remove the chicken from the skillet and place on a baking sheet.
  11. Spoon marinara sauce over each chicken breast.
  12. Top each chicken breast with slices of fresh mozzarella cheese.
  13. Bake in the preheated oven until the cheese is melted and bubbly, about 15-20 minutes.
  14. Garnish with chopped fresh basil, if desired.
