Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 4 large eggs
- 2 cups panko breadcrumbs
- 1 cup grated parmesan cheese
- 2 cups marinara sauce
- 8 oz. fresh mozzarella cheese, sliced
- Fresh basil, chopped (optional)
- Olive oil, for frying
Instructions
- Preheat the oven to 375°F.
- Season the chicken breasts with salt and pepper.
- Place the flour in a shallow dish.
- In another shallow dish, beat the eggs.
- In a third shallow dish, mix together the panko breadcrumbs and grated parmesan cheese.
- Dredge each chicken breast in the flour, shaking off any excess.
- Dip the chicken in the beaten eggs, then coat in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove the chicken from the skillet and place on a baking sheet.
- Spoon marinara sauce over each chicken breast.
- Top each chicken breast with slices of fresh mozzarella cheese.
- Bake in the preheated oven until the cheese is melted and bubbly, about 15-20 minutes.
- Garnish with chopped fresh basil, if desired.
